Pumpkin Ghee Bread

A deeply grounding GF loaf crafted to settle the nerves, rebuild energy, and offer comforting digestive warmth for mothers navigating the Fourth Trimester.

TCM Intention: Tonify Spleen qi and warm digestion

Ingredients (One Loaf)
  • 3/4c walnut meal, 
  • 3/4c rice flour, 
  • 1/2c potato starch, 
  • 1 tsp baking soda, 
  • 1/2 tsp baking powder, 
  • 1/2 tsp salt. 
  • Spices: 1 1/2 tsp cinnamon, 
  • 1/2 tsp ginger, 
  • 1/4 tsp nutmeg, 
  • 1/4 tsp cloves. 
  • Wet: 1c pumpkin puree, 
  • 1/2c melted ghee, 
  • 3/4c brown sugar, 
  • 2 large eggs, 
  • 1 tsp vanilla extract
Instructions
  1. Begin by preheating your oven to 350°F and preparing a loaf pan with grease or parchment. 
  2. In a large bowl, whisk together the pumpkin, melted ghee, brown sugar, eggs, and vanilla until smooth and integrated. 
  3. In a separate bowl, sift and combine all dry ingredients including the warming spices and walnut meal. 
  4. Gently fold the dry mixture into the wet until fully incorporated. Allow the batter to rest for 10 minutes to hydrate the flours.
  5. Pour into the pan and bake for 60 to 75 minutes. The center should be set and a toothpick should emerge clean. Cool before slicing to support your healing path.
