Golden Milk Congee

Ingredients (4 Servings)
- 1 cup white rice (soaked for 30 mins)
- 7 cups filtered water or chicken bone broth
- 1 cup coconut milk
- 1 tsp ground turmeric
- 1 inch fresh ginger, sliced thin
- 1/2 tsp cinnamon
- Pinch of black pepper
- Garnish: goji berries and black sesame seeds
Directions
- Rinse soaked rice and place in a large pot with water or broth.
- Bring to a boil, then reduce heat to a low simmer. Cover loosely.
- Whisk in turmeric, cinnamon, pepper, and add the ginger slices.
- Cook for 1-1.5 hours until rice is broken down and creamy.
- Stir in coconut milk for the last 10 minutes of cooking.
- Serve warm, garnished with goji berries and sesame seeds.

• 1/2 tsp ground cinnamon
• 1/4 tsp black pepper (activates the turmeric)
• Pinch of sea salt and optional maple syrup to taste

Rinse the Congee mix (white rice, red dates, and goji berries) thoroughly and place in a heavy-bottomed pot or slow cooker with 6-8 cups of filtered water or bone broth.

Bring to a gentle boil, then reduce heat to low. Cover and simmer for 60-90 minutes, stirring occasionally, until the rice has broken down into a creamy, porridge-like consistency.
